For a hearty beef pie or stew, I’d go for the warmth of the Sherry Cask Edition, with its comforting gingerbread hints. Serve either neat or in an old fashioned. The resulting whisky is rich, fresh and fruity with a soft, dry finish. It is defined on the nose by signature orchard green apple notes which combine with banana, ripe honeydew melon and white peach together with fresh citrus, jasmine and vanilla coconut cream. Speyside scotch whisky distillery Tamnavulin, which has found success in its red wine cask finishes, is looking to build on that success by expanding into the realm of white wine. Tamnavulin’s latest release is Tamnavulin White Wine Cask Edition. Tamnavulin’s Red Wine Cask and White Wine Cask editions undergo secondary maturations in wine casks that impart the Speyside single malt with specific flavour profiles, from cabernet sauvignon and pinot noir to sauvignon blanc. When pairing them, it’s intuitive to follow the same lines as with red and white wines. Tasting Notes Colour Tawny gold Nose Opulent floral aromas fuse with orchard fruits, lime marmalade, cinnamon spice, poached pear and almonds. Palate Cascading flavours of nectarines, damson plums and gingerbread give way to sweet red berries and banana bread. Finish Pure and expressive - a rhapsody of perfection.The colour is golden yellow and the nose is fresh, vibrant and green. Lively aromas of crisp apple, cantelope melon and something very vegetal - this is reminiscent of fresh asparagus and a bouquet garni. Hints of green tomato, elderflower and lemon sherbet also add interest and depth.

Tamnavulin unveils white wine cask edition single malt

Distilled on 3 November 1978 at Tamnavulin, this single malt spent the next 22 years in a pale Oloroso sherry butt. On 14 February 2001, Signatory bottled the whisky in a release of 548 bottles. Beginning its life in American Oak barrels, the expression moved on to second maturation in sauvignon blanc wine casks. This has long been the tradition of Tamnavulin’s double matured whiskies. The ABV comes in at 40%, the same strength as their previous Red Wine Cask Edition. For something different, I love serving rhubarb and custard with the German Pinot Noir Cask finish, its layers of vanilla and ginger pairing perfectly. Any berry dessert is calling out for the allspice and jammy forest fruits of the American Cabernet Sauvignon Cask finish. Serve it neat as the perfect end to the meal.
