I will say that I have cooked a lot of British recipes and good kitchen scale is a must if you want to try any of these recipes.

In that chaotic 20 th century, Britain began as the most important and richest country in the world. The recipe was genuinely spot on - I followed it word for word and the treacle tart came out perfectly, and looked just like the one in the photograph in the book (always a relief! Lehmann 279) Other factors also must have been in play, but the transformation of British society from the relatively fluid vertical hierarchies of the ‘long eighteenth century (1688-1815)’ to the relatively ossified and horizontal Victorian class structure itself did transform the quality of British food, and not for the better. Her Century of British Cooking pulls together her life’s work, with over 200 recipes and is truly an important work of culinary history. Memorable Meals Made Easy is all about minimising the time you spend in the kitchen so you can maximise the time spent with guests.

The British Cookbook is the latest publication from Phaidon devoted to a specific culinary region of the world. It makes me want to take a year off and stand in a kitchen, all day every day trying to bring these wonderful dishes to life … without a hint of jingoistic grandstanding it reminds us what a rich, varied and proud cuisines we have in Britain … so grateful to have this.

His catalogue of wonderful books make for rewarding and fine reading: most of them in his present an past catalogue are to be found on my book shelves, and I can highly recommend them to anyone keen to learn about the practical details of cookery performed in a long gone era. In particular, she worries away like a terrier at the fundamental (though until recently over-looked) problem of the gap between prescription and practice. Celebrating Great British food in their British Classics cook book, the Hairy Bikers cater for all with a recipe book full of iconic and timeless British meals. The implications of what Lehmann has found reinforce the conclusion of Tim Blanning and others that Britain was indeed a place apart, blessed with a relatively broad, porous and fluid political nation (at least by the standards of the eighteenth century) that shared a greater sense of common cause than its European counterparts. The second book under consideration is by the author of the passages quoted in the introduction to this review.
