Whether you’re a seasoned enthusiast or just dipping your toes into this world, I invite you to join me as we explore the fascinating realm of these legendary spirits.

I really like Tequila ARETTE Clásica Blanco. It has a sweet aloe and ginger flavor as well as crisp minerality, making for a really refreshing Margarita while being equally nice to sip neat. It’s very affordable, too!” —Tyler Cazes, general manager, Lengua Madre, New Orleans I’m J Highland, and for over 30 years, I’ve been deeply immersed in the captivating world of Tequila, Mezcal, and other agave spirits. Tequila production begins with the agave plant, cultivated in Mexico’s desert regions. Early civilizations believed agave was a gift from the gods, which they used as a source for food, fibers and building materials. They would cut off the top of the plant, and the remaining stump filled with a liquid called aguamiel that would ferment into a cloudy, low-alcohol drink. The beautiful hacienda of Herradura now boasts an almighty distillery to produce enough spirit to meet the demand for its Tequilas. The Plata is aged for 45 days in American oak barrels. A nose of marzipan, cooked agave, orange, lime and pine sap leads onto a palate full of vanilla, orange oils, honeyed agave and pencil shavings. I would choose PATRÓN Silver from Jalisco, Mexico, and use it in a classic Margarita. I look for a tequila made with 100 percent Blue Agave, and that’s the case with PATRÓN Silver; it’s crystal clear, light, fresh, and smooth.” —Alex Serena, bar manager, Teleferic Barcelona, Palo Alto, Calif. Finish: A medium length finish. There's a great agave peppery finish that goes really well with the agave and citrus sweetness flavors. Wonderful finish. Tequila may be bottled without maturation or aged in oak barrels. The length of aging determines how it is labeled: Colorless blanco or silver tequila is aged fewer than two months in oak; reposado between two and 12 months; añejo for more than one year. Extra añejo is a category added in 2006 that includes tequila aged at least three years in oak vats under 600 liters. Generally, the longer tequila ages in oak, the smoother and more full-bodied it becomes.

Made by legendary distiller Carlos Camarena, Ocho made waves when it was launched because it was the first-ever single-field Tequila to be produced. These single-field vintage releases are limited – once they’re gone, they’re gone, to be replaced by a new vintage from a different field later. This particular Tequila, from the field Las Presas, or The Dams, is all tropical characters of guava, melon and pineapple, mingling with the unmistakable agave and pepper character that come with Ocho products. Alc 40% Body: A medium body, great flavors throughout of agave, pepper and fruit. A really great mix of everything. The insights I’ve gained aren’t just from books or hearsay; they are the result of hands-on experience, countless tastings, and an enduring passion for these spirits. Made by Felipe Camarena, G4 is a testament to the mad scientist approach he takes in producing his tequilas. From modifying steamrollers to crush his agave, through to collecting and using rainwater in this tequila, he doesn’t take any shortcuts. The result is an expressive, floral nose and an oily, viscous palate with incredible minerality, cream, agave and spicy white pepper. Alc 40%

I’ve been really heavy into Espresso Martinis and whiskey-based classics lately, but have been switching out the base spirits for the PATRÓN Añejo Sherry Cask. Rich wood and a slight touch of sweeter sherry notes all play together beautifully to create a delicious base. It is a limited release from the hacienda, so run, don’t walk to your nearest bottle shop and get it before it’s gone.” —Phil Collins, beverage director, TableOne Hospitality ( Mother Tongue, Los Angeles/ La Société Bar& Cafe, San Francisco), NYC Created in partnership between Olmeca master distiller Jesús Hernández and two top bartenders from the UK, this 100% agave tequila hailing from the Highland region of Jalisco boasts a nose full of agave character, alongside grass, citrus and spring blossom. These characters continue onto the palate, accompanied by a chalky hint and a cocoa finish. Alc 38% Since Tapatio’s launch, each batch of the brand’s tequila has been produced at Jalisco’s La Alteña, a now-famed distillery raised by Camarena. This wasn’t the founder’s first agave-related venture: While the Camarena family has been involved in tequila production since the early 1800s, they were forced to cease tequila distilling in 1910 when their family distillery burned down during the Mexican Revolution. Despite this, the Camarenas remained an integral part of the production process, and prior to establishing La Alteña, Don Filipe had made a career out of growing and selling agave for other tequila producers in the region. He constructed La Alteña on the very estate where his existing agave grew, began distilling tequila from plants harvested on the land, and called the spirit Tapatio. La Alteña is now home to Tequila Tapatio, Tequila Ocho, and El Tesoro, all of which are exclusively produced using agave sourced on the estate grounds. Today, Don Felipe’s grandson Carlos Camarena serves as La Alteña’s master distiller. Tequila may have a wild and crazy reputation, but this unique spirit is created according to strict guidelines, guaranteeing authenticity and consistency. It’s distilled from the fermented juice of the Weber blue agave plant, and comes only from a specified region of Mexico, centered around the western state of Jalisco.

A tequila labeled simply “gold” or “joven” is unaged, possibly with caramel coloring or other sweeteners added.

Don Julio is named after the brand’s founder, Don Julio Gonzalez, who started making Tequila in 1942 when he was 17 years old. The flavour profile of Don Julio Blanco is hailed as a classic, balancing creamy and peppery characters with a vegetal note, some lemon, pastry and a clear minerality. Alc 40% The fermentation length, temperature and yeast affect the development of flavor compounds or congeners that produce a specific tequila style. Some producers add piña fibers called bagasse to the fermentation vessel to enhance the complexity of the spirit. Regulations demand that tequila be double-distilled in pot stills, or produced with a continuous still that has at least two columns. My journey has seen me as an owner of sophisticated bars and renowned liquor shops, and even as a Mezcal distiller, honing the craft from scratch. Well, Speciality Brands, I can assure you that I will not be giving up tequila, since it is my spirit of choice. What I WILL be giving up is Tapatio Blanco. It is, quite simply, an extremely unpleasant tequila. I thought I would give it a fair try, so had it straight, with sangrita, in a margarita, etc. etc. etc. but one simple fact kept rearing its ugly head... It tastes "chemically", almost a soapy flavour which, I can assure you, is not what I look for in a tequila.
