Step 2 Meanwhile, make frosting: In a large bowl with a hand mixer, beat butter until fluffy. Add powdered sugar and beat until combined, then add Champagne, vanilla, and salt and beat until combined. Beat in food coloring. It is the most important ingredient and it will make or break your truffles, this dessert will only taste good if the chocolate is good. You can also go a bit lower and use chocolate with 60% cocoa. The bitter notes will be milder. However, I would not go much lower than that, less than 50% cocoa is milk chocolate. To complement our truffles we used real whipping cream and a hint of strawberry to bring out the smooth and fruity notes of our bubbly. We only ever use real ingredients in our recipes: why use artificial flavours, when nature offers a bounty of fresh flavours to use? An emulsion of chocolate and cream. When warm it is rather liquid, but it will firm up when chilled so you will be able to form the balls.
