I can guarantee that if you try and bake this in the oven, you’ll just end up with a big mess to clear up! My cheesecake isn’t as tall as yours – how come? I know it sounds strange, but…they taste like Oreos! That’s right, coming from Non-GFBF, they taste like the original. I think they are slightly (only slightly) more grainier – and honestly saltier – than I remember. What are the ingredients of the Gluten-Free OREO? Make sure you’ve got a good Springform cake tin to hand too or you’ll never be able to get your cheesecake out without destroying it! Of course, I would never do that now would I… oops. I’d recommending using digital cooking scales like these so you know you’re getting an accurate measurement and replicating my recipe as accurately as poss. The one I used is from Asda which, at the time of writing, has no gluten-containing ingredients and no ‘may contain’ warnings for gluten, wheat etc. The biscuit pieces in it are made from mainly cornflour and potato starch! For the dairy-free double cream: Elmlea Plant Double Cream (has a ‘may contain’ warning for milk and easily found in supermarkets) or if you have a milk allergy, Flora Plant Professional Double Cream (no may contain warning for milk, but can only be bought online). All I'm waiting for is gluten free Oreos to officially launch in the Uk (pleeeease!) but if you're in the States then you've got everything you need. If you really want to nail the presentation of this cake, you’ll need a plastic icing scraper and some piping bags.

In the meantime combine gluten-free flour, baking powder, baking soda, milk powder (if using), and kosher salt in a separate bowl. I can understand the need to reduce sugar in our foods, but this recipe is one where I wouldn’t recommend it. No, you definitely don’t. Soaking cashew nuts in water, then blitzing them to use for the filling is the ‘done’ way to make a dairy-free or vegan cheesecake.
