El mezcal es una bebida alcohólica producida a partir de la destilación de la piña de agave. Esta bebida milenaria es originaria de México y se produce principalmente en el estado de Oaxaca. En esta región hay varios pueblos que se dedican a su producción y uno de ellos es Santa Catarina Minas. Formally, mezcal has carried an appellation of origin since 1994. Like wine, it has its own geographical indications, which reflect the state and region it’s grown and produced in. It has always had an “it takes a village” quality to it, with communities coming together not only to enjoy it, but help make it. Within Mexico, mezcal is regulated under Norma Oficial Mexicana (NOM) regulations, originally NOM-070-SCFI-1994 (in 1994), by the industry body Consejo Mexicano Regulador de la Calidad del Mezcal A.C. (COMERCAM, the Mexican Regulatory Council for Mezcal Quality). This regulation became law in 2003, and certification began in 2005. [15]

The Johnnie Walker owner intends to maintain the sustainable credential of the brand, with the founders remaining with the business and the brand continuing its existing relationship with agave farmers and master distillers. The business was launched in 2011 by a group of Mexican entrepreneurs with a strategy to develop the category and also preserve traditional production methods. The production of mezcal moved from the coastal river basins of the Río Grande de Santiago to the inland ravines by the early 1700s to evade the prohibition on spirits production, as well as to take advantage of the larger numbers of wild agave plants in the interiors. The plants used expanded to highland cultivars of Agave angustifolia, as well as Agave rhodacantha in Jalisco, and Agave hookeri in Michoacán. Mezcal Unión was founded in 2011 by a group of Mexican entrepreneurs with the aim of growing the category and keeping traditional production methods alive. The literal translation of mezcal is ‘oven-cooked agave’, the only real difference between mezcal and Tequila is that mezcal is not regulated to the 5 states, like Tequila is. It is predominantly made in the southern state of Oaxaca and unlike Tequila it can be made from any type of agave plant native to Mexico, but not blue. It is categorized from blanco, through to extra añejo in the same way Tequila is and has grown massively in popularity recently. The production and ageing, all the way through to the bottling is generally the same as Tequila.
