The whiskey scene is full of independent bottlers and blenders, and this model has gained traction in the rum world as well. Barbados’s Mount Gay has been around in one form or another for about 300 years (Remy Cointreau has owned the distillery since 1989). The reason is simple: the original Bumbu version has a low alcohol content of 35% ABV and contains a lot of sugar. The result is a well balanced rum with a remarkably long finish, with a palate of chocolate, banana, coconut and mango.VS (Very Special), VSOP (Very Special Old Pale), and XO (Extra Old) are all used to refer to the age of a cognac. Even more recent is Terroir Volcanique, a blend of three-year-old rums aged in new American oak barrels toasted to custom levels that is meant to highlight the terroir where the rhum is made. This extra aging results in a more intense flavor, with deeper and richer notes of wood, spice and dried fruit. The 4-year aging process of VSOP cognacs results in a product that is less complex, with fewer nuances and aromas.

The rum kicks off with a nose of distinct coffee notes and a mild citrus element, with notes of roasted nuts also heavy in the mix. On the nose it's very bready and buttery, there's a pastry like aroma, alongside bananas and maple syrup. This premium XO version is not distilled at West Indies Rum Distillery in Barbados Barbados (like Bumbu original) but in Panama. There are many different expressions in the catalog to explore, from the Organic, to Gran Anejo which is aged up to six years, to the Imperial Porto Cask which is matured in tawny port barrels. This is a newer brand that was founded by Caribbean native Marc Farrell, who wanted to create rum blends sourced from reputable distilleries that did not use sugar, color, or additives for flavor.

A company like the aforementioned Holmes Cay is one of them, and now Rolling Fork is offering some stiff competition. There are various bottlings sourced from countries around the Caribbean, most of which are aged for a secondary period of time in French cognac casks. VSOP cognacs are best enjoyed neat or over ice, but they can also be used as an excellent base spirit in cocktails. They can be great on their own as sipping rums or used in cocktails as a unique flavor profile that stands out from other spirits. But, they are worth the extra cost as they bring a unique level of quality and flavor that can’t be found in other types of spirits.
