Aged in oak casks and then in bottle Bollinger has created a fabulous, fine fizz with nuanced, succulent flavours. Disgorged in May 2021, the latest rendition of Bollinger's NV Brut Special Cuvée is showing beautifully, offering up aromas of ripe orchard fruit, citrus oil and peach, mingled with hints of walnuts and freshly baked bread. Triumphant complexity is a given at Bollinger, but it's the dynamic freshness and vitality that really set it apart as one of the most affordable Champagne benchmarks.

It is the sole grape in Blancs de Blancs, which are some of the richest long-lived Champagnes produced. The house charter states that 70% of grape supply must always come from the firm’s own vineyards, defining the standards of excellence that are synonymous with the Bollinger name. Drinks will be chilled in 30-45 minutes and will be kept cold for several hours, especially if kept in the shade. Bollinger Special Cuvée is the result of the delicate blending between harvest grapes and a majority of Reserve Wines in magnums, including some aged for more than 15 years in Bollinger's cellars. Special Cuvee is made from a majority of reserve wines, part of which have been aged in magnums for 5 to 15 years. Like its rosé counterpart, the latest release of Bollinger's NV Brut Special Cuvée is showing exceptionally well, bursting from the glass with aromas of honeyed apples, crisp stone fruit, buttery pastry, ripe lemons and fresh walnuts.

In 2012 Champagne Bollinger was certified High Environment Value (HEV) this certification rewards a number of environmental procedures implemented at the Maison. The creamy character of this cuvée is due to the special production process in which some of the wines are fermented. Special Cuvée is the result of the delicate blending between harvest grapes and a majority of reserve wines, including some, aged in magnums for more than 15 years in Bollinger's cellars. Firstly, a large proportion (85%) of the grapes are from grand cru vineyards, and 60% of the blend is Pinot Noir both of which contribute towards the generous and concentrated style of the wine. And if that wasn't luxurious enough, the wine is then aged for double the legal requirement, so expect nothing less than excellence in every sip. She ran the company between 1941 and 1977 and today it is managed by her great-nephew, Ghislain de Montgolfier.

Bollinger is famous for the quiet majesty and power of its very handsome, pinot-driven, non-vintage blend. Pinot Noir accounts for nearly 40% of the plantings in Champagne and lies at the heart of most blends - it gives Champagne its body, structure, strength and grip.Champagne Bollinger owns an impressive 178 hectares of vineyards, of which 85% are in Grand Cru and Premier Cru villages. Pinot Noir, 25% Chardonnay, 15% Meunier sourced from more than 300 crus, including 85% grands and premiers crus; 15% fermented in old oak barrels.
