It is super simple to make too – crush the biscuits & mix with melted butter – press into the base and the base is already done! Whisk together the cream cheese & sugar, whisk in the Baileys, whisk in the double cream… pour on and set! Decorate how you please!

The Frozen Strawberry Mudslide is a boozy treat made with Bailey’s Strawberries and cream, vodka, coffee liqueur and strawberry ice cream topped with whipped cream, a chocolate drizzle and a chocolate covered strawberry garnish! This cheesecake does not use chocolate to help it set – I tried it a couple of times with chocolate in, but I felt like it overpowered the flavour of the baileys, and drizzling the chocolate on top worked far better! Simple!This sweet and fruity ingredient pairs perfectly with the creamy, indulgent flavor of Baileys, creating a combination that's sure to satisfy your sweet tooth. I used mascarpone in this recipe as I thought it went really nicely with the Baileys. You can of course use full fat cream cheese if you would prefer but, like always, it must be FULL FAT! I can explain why there is another cheesecake recipe – I had oodles and oodles of requests for a Christmas/Baileys cheesecake so how on earth could I disappoint?! Plus – I made this just in time for my Mums birthday, so it doubled up as her birthday cake! See – the perfect excuse. Recipe I did my usual sort of decoration for this, but because it looks quite similar to my no-bake white chocolate & strawberry CheesecakeI didn’t want to add a drizzle of white chocolate or anything. I’m glad I didn’t, as I think the swirls of cream, fresh strawberries, and freeze dried strawberries I had enough impact as it was. I honestly think this cheesecake just looks delicious, and if you’re a fan of Baileys, and strawberries, you will utterly adore the taste as well. I figured, with the help of my lovely Facebook followers, that Baileys would be a delicious flavour for a Christmas cheesecake – I don’t know about anyone else, but there is always a bottle of Baileys around at my Christmas events, and this is a delicious way to use some up! Hold the strawberries by the stem and one by one dip each into the melted chocolate and then place on some parchment paper to set up. So… the new Baileys finely came to the UK! Honestly, I am in heaven. To summarise the taste? An alcoholic strawberry milkshake. Honesty, its SO GOOD. Having it straight isn’t really my thing when its the normal Baileys, but when its one of the flavoured ones such as the chocolate version, or the almond one I am definitely a fan.

I did not have Valentine’s Day in mind when I first grabbed the ingredients for this Frozen Strawberry Mudslide but it is pretty much the perfect holiday drink just in time with one week until V-day! I see this pretty boozy shake as the perfect after dinner treat to share with a friend or spouse. I want to curl up in a blanket on the couch on sip on this now and ignore the freezing temperatures outside!
