Description

A torch is a great way to finish recipes prepared using the sous vide cooking method. And as you can tell by the name, the Su-V Gun was made for just that. The other models we like include Grillblazer’s other torch, the Grill Gun. And both of Bernzomatic’s popular models, the TS4000 and TS8000. Grill Gun I take this as a lesson learned by the Company. Buying a lower cost competitor can open you up to the risks that caused the Grillblazer recall. The Su-V Gun is now a sound product. What Can You Do With The Su-V Gun? Q – With the Su-VGun, when I’m lighting my charcoal, my charcoal glows red but doesn’t turn gray, like I’m used to seeing?

A – The entire sparking mechanism is designed never to fail, so the only thing that might go wrong is that you could get debris in the nozzle from not keeping the Gas Connector out of the dirt when it is disconnected from its fuel source. If this happens, the gas nozzle is replaceable with a servicing kit available at GrillBlazer.com The Su-VGun is shipped with a vinyl cover for the Gas Connector. The concentrated power of a torch flame may be the best and fastest way to caramelize the food’s exterior. This creates a crispy layer, which contrasts beautifully against the perfectly done interior of a piece of meat. It looks and tastes great. Q – When I pull the Handle Trigger, the fuel flows from the Su-VGun even though the valve is shut off. Is this normal? I’m a guy who loves to grill with charcoal and smoke with wood, so sous vide cooking feels like cheating. But all feelings aside, I’ve been truly impressed by how good a steak I can get using a Vacuum sealer, Sous vide, and a flamethrower. The device is sold with a “torch stand” that makes it easy to set upright once you’re done using it. It prevents topples and, therefore, the chance of some bobbles and accidental burns. Noise Level

Never before has lighting your charcoal been so fast and so fun!

With a 1-lb canister, you should be able to generate 10 unique burns of about two minutes before you’ll need to replace it.With the 20-lb tank you should get 200 burns. As part of our broader series on kitchen torches, we’ve looked at several different models. The Su-V gun consistently performs among the best of them. Both products can pump out a flame temperature over 3,000 F, and the TS8000 can get all the way to 3,650 F if you use a MAP-Pro fuel cylinder. Either way, it’s more than enough power to generate a fast Maillard reaction and (moreso) caramelization.

Total heat output isn’t the only meaningful aspect of the Su-V flame. The device is equipped with a baffled nozzle, which provides several benefits. The Grill Gun is another excellent torch, but it’s really better suited for starting charcoal (or a campfire) than for searing food. There are a number of gas flow refinements that are not obvious that make the two substantially different. They all have to do with the desire to implements a cleaner, shorter, hotter flame so it can be used indoors in closer proximity to your meat that you are searing. You simply wouldn't want a 21-inch barrel and a 2-foot flame, searing meat on your kitchen counter. The SU-V Gun is an incredibly powerful torch that works well for several uses, but especially for finishing sous vide proteins. It’s excellent for caramelizing food and creating a nice crispy crust.

SEE WHAT PEOPLE ARE SAYING

One of my favorite things about using this torch is the sound. The rushing flame always reminds me of a jet engine, even though it’s much more tame. The total BTUs of fuel flow (CFM) is considerably less so that the flame is only about 16" long. The output orifice is smaller which leans out the fuel mixtures as it increases the velocity of the fuel flow This torch is about 15” long and only weighs 1.5 lb, not including the weight of any fuel canister you might attach to it. The Su-VGun is easy to hold in the hand, and it accepts multiple types of fuel. Most of the time, I’ll use a 1 pound propane canister that screws into the bottom of the gun. They’re easy to find at most hardware stores, and they last for at least 10 cooks before they run out in my experience. Always have an extinguisher nearby when using this torch. You probably won’t need it because of the safety features built into the product. Still, it’s better to be safe than sorry when the consequences of an accident are high.

I’ve heard some people ask if the handle heats up during use, but that’s not really a problem since the flame is only present at the terminal end of the nozzle, which is far away from the grip and trigger. Only room temperature, uncombusted gas is running through the device’s body. Trigger & Safety However, the torch gun does have a safety valve that stops propane from flowing if you do happen to lay it down or tilt it too far where you’d get liquid propane coming out of the device. Today I want to show you my favorite way to finish a protein once it comes out of the water at 130°. It’s called the Su-VGun, and it’s the little brother of the larger GrillGun that we use all the time to light our firepits, pizza ovens, and grills. Su-VGun Specifications Once the torch is lit and the safety is compressed, you can control the flame intensity by adjusting the pressure applied to the trigger. Both models (from Grillblazer) are excellent products. Nevertheless, if your primary use case is for finishing food, the Su-V Gun is superior. Bernzomatic Torches – TS4000 & TS8000David Lewis is an avid home chef, and frequently uses sous vide as a time-saver when feeding his family of 4. When he's not chronicling his culinary adventures here or on Kitchen Ambition, you'll find him tending the hops in his beer garden or delivering small-batch home roasted coffee in his neighborhood. There’s really only one way that the unit will stay on the stand, and that’s when you put the nozzle of the gun facing in the direction of the stand legs. To get the propane gas flowing, you turn the red knob to the left and you’ll hear the gas begin to flow. Once you can hear it moving just a little bit, you pull the trigger to ignite and a small blue flame will appear.
