Wikipedia informs me that faluda is a chilled dessert popular across South Asia, made with rose syrup, milk, sweet basil seeds, vermicelli, jelly and is sometimes topped with a scoop of ice cream. It sounds completely unlike anything I have ever tried before which is promising… But can you really approximate this delicate sounding delight in a hermetically sealed bottle and ship it half way across the globe? After narrowing down the ingredients in the buttercream, I realized that it was vanilla! The SECRET (and for years, illusive) ingredient was the extract that I use religiously, in a lot of my baking, and had never thought was a core part of the falooda flavor! Falooda is made primarily from rose syrup, vermicelli noodles, basil seeds and milk. Some versions are topped with a scoop of ice cream and/or have some jelly in it as well. Bright, sweet and cooling, it’s a drink you’ll need a spoon to fully enjoy since there are lots of ‘bits’, but it’s worth the effort. It’s so popular, you’ll find it both in restaurants and street food stalls in India and the region. What are the main ingredients in falooda? They come from the sweet basil or Thai basil plant, not to be confused with the basil you may be more familiar with that is common in Italian cooking. It is believed to have been brought to India and the region by Persian merchants in the Middle Ages, and can be found in one form or another in many parts of South Asia, and beyond.

It adds refreshing aromas and sweetness to the drink. Some of the brands that I recommend are Guruji (available in Indian grocery stores), Monin, and Rooh Afza. Tip: This syrup is also perfect for making many refreshing summery drinks including my favorite - simple rose water with chia or basil seeds. There are many different flavors of falooda available at stalls or restaurants, but rose-flavored royal falooda is the most common. Another seasonal flavor is mango falooda.

Break the vermicelli or rice noodles into 1 inch pieces then boil like you would pasta, drain and refrigerate to cool.
