We cannot claim to be the first; after all, the idea of removing the juice from an apple must be as old as the apples themselves. However, more than 40 years has got to be some kind of record. Duskin has been producing single varieties since the beginning. The first juice of the year usually rolls off the press in September so look out for it in a shop near you!

The apple pomace left behind when we have extracted all the juice is not wasted. It is taken by a neighbour of ours at Ottinge Dairy. His cows happily turn it into milk which you can buy direct from the farm. If you use their vending machine you could even re-use a Duskin apple juice bottle for it! One sign of genius is when it makes you say "Oh, of course." I remember this whenever a first time taster says "Oh, it tastes of apples!"One other point not to forget is that there are many natural enzymes in the apples themselves - It is the natural enzyme controlled cell processes which create the flavours in the first place.

The only thing we add is a little Ascorbic Acid (also known as Vitamin C) which is an anti-oxidant. It helps to prevent the juice turning brown (just like putting lemon juice on a cut apple) They say variety is the spice of life and an apple is a versatile thing; you can eat it raw or cooked, sliced or diced, dried or juiced. The ways are limited only by the wild imagination of the chefs and dreamers; Apple Juice is merely a sub set of this excitement. Warmed, with honey and cinnamon, in a mug, on a cold evening, in front of the fire. Frozen as a lolly with a single borage flower in the centre for a hot summer afternoon. Mixed as a syrup into your apple Tarte Tatin to soak gloriously into the pastry. Stirred lovingly into the pan juices as you make the roast pork gravy... Or you could just drink it neat.

The process is low-tech and low-volume which allows single varieties to be kept separate, allows the natural flavour to remain largely unchanged and "in the bottle pasteurisation" preserves aroma.
