I used Maille Honey Dijon Mustard and Maille Old Style Mustard. It was a perfect combination of the mustards along with the honey, melted butter, brown sugar and fresh thyme. After it's done in the slow cooker, remove it from the slow cooker and put it into an oven safe dish. To make the dipping sauce, in a bowl whisk together the dijon mustard, mayonnaise, honey and cayenne. Use a small knife to remove the rind from the gammon join, leaving the fat intact. Score the fat in a diamond pattern. Optional: Push a clove into the centre of each diamond to make your gammon extra special this festive season.
