Description

To take off the fine scratches and burrs left by coarser stones, and to polish the surface, you can use stones starting at around 2000 grit. There is theoretically no upper limit, but stones above about 10000 grit achieve practically no measurable improvement in the edge. It is also interesting to note that above 8000 grit, there is no Japanese measurement standard. For stones labelled as having a finer grit, you simply have to take the manufacturer's word for it. If you sharpen blades only occasionally, and know that you will not need to remove a chip along the edge of the blade, a combination stone will suffice. The size you choose depends mostly on a trade-off between cost and speed. The bigger the stone, the faster you can work. Smaller stones work just as well, they simply take a little longer. How much money do I need to spend?

SHAPTON Ceramic KUROMAKU grit 5000 is another Japanese whetstone that we really like and regularly use when we are finishing our knives in the sharpening process .

Chef knives are multi-purpose kitchen knives that can sustain damage on the edge with certain kitchen tasks. TIP: While many people may be aware that they can ruin the knife if the whetstone is used incorrectly, what about ruining your whetstones when using them incorrectly? Find out the most common ways people ruin their whetstones in the article below: Sharpening Your Knives with a Whetstone While you should always read the individual instructions that come with your whetstone, here is some general guidance on how to use a sharpening stone:

The grit is critical because it determines how well a whetstone actually sharpens knife blades. A smaller number means you’re getting a coarser grit — #1000 or less is considered coarse, and it’s best for extremely dull blades. A larger number indicates finer grit, which is ideal for finishing, polishing, or creating a sharper edge. It’s a good idea to have whetstones in a variety of grits so you have everything you need to fine-tune your knives. The advantages of owning a whetstone Grit refers to the size of the individual particles of abrasive in the sharpening stone and as you might expect, having different grits means they do different things. The question of quantity will mostly be determined by how you sharpen your knives and to what sharpness level you want to take your knives. If the chef’s knife is stainless steel, we recommend adjusting your whetstone set by using the sequence of stones we suggested for stainless steel knives.
