According to my research, “pasanda” means favourite. My ancient curry cookbook claims “passanda”, spelled slightly differently, means thin slice of meat. Flattened or pounded meat is added. This isn’t the case here in the UK. Here, we know a pasanda sauce by its mildness and sweet flavour. You can add any pre-cooked meat or vegetables to this pasanda sauce. Although you have the option of going for an alternative substitute for a particular spice but it may come at the cost of compromising the taste? SO

Having the alternatives and substitute works in their favourso that they do not have to compromise on the taste or try the dish. This has a unique flavor profile as the ingredients (especially the spices), their proportions and the cooking method of the dish are all different. What is interesting about the Pasanda is how much it reveals – not just in taste but in showing the history of the Kayasths – a unique community on the subcontinent whose culture and food reflected the upper class of India during this time. The Kayasths were the courtiers to the Mughal kings. They weren’t royalty, but they were a privileged community. It is the use of Pasanda that reflects this upper class. Spices - a mixture of fragrant spices including cardamom, ground coriander, cumin, garam masala, cinnamon, turmeric, and mild chili powder (optional). Meanwhile, finely chop or crush the garlic. Finely slice the onion. Halve the tomatoes. Finely chop the coriander. Pasanda is an authentic Indian dish which is loved all throughout the world. My lamb pasanda is also, surprisingly, suitable for the Slimming World plan if you use low fat yogurt and omit the cream.
