We can't wait to try this out. Getting that intensity of a spirit in a 0% alcohol version is extremely hard. Have they done it? English-speaking Guyana has been a sugar producing country since the 17th century, and was the original rum supplied to the British Navy. Today, there is only one active distillery left in Guyana, owned by a company called Demerara Distillers. Suffice to say, a lot of white Rums are really quite flavorless, which is a shame. Take your time and find something with character – if the new make Rum is lovely, the aged Rum should be even better! In its simplest form, rum is a clear liquid distilled from different forms of sugar, including demerara and molasses. However, this is often followed by barrel ageing in oak casks and, like some of the modern craft beers, some also have fruit or spices added.

Ageing rum in a barrel makes the rum darker, although some rum brands will also throw in some burnt sugar to make the colour appear darker, too. Guyana was a pristine land inhabited by Arawaks and Caribs when Christopher Columbus came ashore in 1498, though it was not produced on a large scale until the late 1700s, roughly a century later than in the rest of the Caribbean. As Guyana’s plantation owners entered the sugar industry late, they were able to import advanced equipment for milling sugarcane and the industry exploded. Despite international familiarity, El Dorado and other rums have fallen behind other liquors, such as vodka, in successful marketing or an effective classification system. [10]This is another loose term that infers without being specific. The process of aging or more accurately maturing a spirit in a wood barrel will result in the spirit acquiring color as it goes. There is certainly a correlation between time and color. The longer a Rum is matured, the more likely it is to become darker in color (clear to lemon to gold to amber to mahogany to brown). But darker does not always equal better. At its most basic definition according to the TTB, rum must be distilled from some kind of sugar product — either sugar cane juice, sugar cane syrup, molasses or other sugar cane by-products — at less than 190 proof and bottled at 80 proof. It can contain up to 2.5% by volume of Harmless Coloring/Flavoring/Blending Materials (HCFBM), which must be all-natural or not more than 0.1% artificial top note, and ... here's where things get fuzzy ... it must "have the taste, aroma and characteristics generally attributed to rum." Demerara is also a name tied to sugar, an extension of which is rum. Specifically, Demerera signifies the rum of Guyana, of which many call as the world’s best. Demerara rum, as you might expect, is produced on the banks of the Demerara River, just outside of Guyana’s capital of Georgetown. All Demerara rum is distilled in Guyana, regardless of where it may be aged and bottled. The rum is derived from sugarcane grown along the banks and is distilled by the last remaining Guyanese distiller, Demerara Distillers Limited, or the DDL. Distilling was introduced in the 1850’s by the British and not long after there were more than 300 sugar estates producing their own rums, though by the end of the century that number began to drop along with the number of sugar plantations. By the 1930s there were 230 operating sugar plantations and in 1958, only 18. Each estate produced its own distinctive rum and they were given their own marks to identify the origin, for example, PM is Port Morant.
