In humans, gum chewing or bruxism-like activities under various stress conditions may influence the secretion volume of various stress markers in the saliva. Chewing leads to decreases in alpha-amylase activity (a sympathetic nervous system stress marker [ 126]), salivary cortisol levels (an endocrine system stress marker [ 28, 127]), and secretory immunoglobulin A (an immune system stress marker) [ 128, 129].
