What I’ve come up with is an Easter egg brownie recipe that blends gooey brownies with bright, colourful & crunchy Mini Egg pieces. In short… yes, yes and yes! And I wouldn’t advise attempting any my recipes without them. One of the worst things you can do in any recipe is alter the quantities by mistake or on purpose. Watch the cooking time– or use a timer. It is important not to over or under-bake your brownie. Undercooking fudgy brownies can lead to a gooey (but tasty) mess, whilst overbaking brownies can make them too dry to swallow. I’m 99.9% certain that you’ll know what theyare, but just in case… Cadbury Mini Eggs are confectionary made from solid Cadbury milk chocolate molded into the shape of miniature eggs. Add the melted butter and caster sugar to a large mixing bowl and beat with an electric whisk (or wooden spoon) until combined. Add the egg (and orange extract, if using) and beat again until it combines and forms a runny batter. Yes! Wrap it well in cling film, or store it in an airtight container or a freezer bag. As I mentioned, you can easily make this entire recipe by hand, so you certainly don’t need any crazy appliances or anything like that.

How long does the fudge last for?

Once the hour is nearly up, preheat the oven to 180'C / Fan 170'C / Gas Mark 4. Line two baking trays with baking paper. Take the cookie dough from the fridge and roll it into balls around the size of a golf ball. Flatten the balls onto the baking tray, making sure there is around 3cm between them in case of any spreading. Segsations: individual segments of chocolate in different flavours, including: milk chocolate, puffed rice, honeycomb, cornflake and a "double seg" of layered milk and dark chocolate, all flavoured with orange oil. This recipe is an awesome one to make by hand because I only use an electric mixer for whisking air into the eggs and sugar.
