Gluten Free Tortillas (these are bigger than the corn ones you can get in Sainsbury’s which is amazing as you feel as if it can properly hold a filling!) Whilst we’re on the subjects of wraps- I really enjoyed these! The photo makes them look a little smaller than they actually are: they’re definitely bigger than the corn taco wraps (that you can currently buy in Sainsbury’s) and they’re also really sturdy too- they held plenty of filling without falling apart. The texture of them was incredibly like regular flour tortillas too. These are a mix of quinoa, corn and tapioca flour-a welcome change from the usual rice flours. Unlike many gluten-free bread alternatives, they don’t use egg either.

Fry onions over a medium heat until soft, then add pepper and potatoes. Cover and cook gently over a low heat for 15-20 minutes, stirring regularly, until the potatoes are cooked through.
