When the cake is done, poke holes all over the top with a skewer and drizzle over the syrup. Make sure that you cover the cake evenly, don't just pour it all in the middle. (If you don't have a loose bottomed tin then you may wish to turn the cake out before adding the syrup otherwise it will be delicate and difficult to turn out without smooshing the top.)

Semolina Bread is traditionally formed in many different shapes in bakeries all over the beautiful island of Sicily. The most common shape is called mafalda and looks a bit like the letter “M” squashed together with a baton of dough across the top. The shape I’ve chosen is called occhi which means eyes and it’s a reference to the eyes of St Lucy who is the patron saint of vision. As you can see, this shape looks a little bit like eyeglasses. This cake will keep well in an airtight container at room temperature for around 5 days. Can I Freeze It?:

As always, I highly recommend using the gram measurements (with a digital scale), rather than the cup conversions. Cup measurements are simply not accurate enough for baking and I cannot guarantee the best results if you use them.Using the dough hook on an stand mixer, knead together the yeast mixture with all of the ingredients except the sesame seeds. When well kneaded, remove the dough from the bowl and finish by hand forming it into a ball. Return it to the bowl. Put two teaspoons of oil in a medium saucepan on a medium heat, add the mustard seeds and cook for two minutes, until they start to pop. Take off the heat, stir in 80g of the peas and leave to cook in the residual heat. Transfer to a mortar, add a quarter-teaspoon of salt, then crush gently and put to one side. The finer flour from durum wheat is used to make semolina pasta flour and “00” flour ( doppio zero flour), an ingredient in pizzas and pastas. The endosperm that’s left after milling the fine flour is then ground up and sold as semolina flour. Bread Flour or Whole Wheat Flour: Lower protein flours, like cake flour for instance, probably will not yield similar results, but if you have bread flour or whole wheat flour, which both have a higher protein content, then your results will be more similar to what you are used to!

Semolina flour and Cream of Wheat are made using the same process, but they are not the same – and they are not interchangeable. The former is made from durum wheat, while the latter is made from other wheat varieties. Pour the batter into the preapared tin and spread it level. Bake for about 35 minutes until the cake is firm to the touch and a skewer inserted into the centre comes out clean or with a few moist crumbs but no wet batter. This recipe uses fine semolina. In the Lithuanian language sumalta means something that is milled, miltai means "flour" and malti means "to mill", while semolina in Lithuanian language is manai. [ citation needed] The words simila, semidalis, groat, and grain may all have similar proto-Indo-European origins as two Sanskrit terms for wheat, samita and godhuma, or may be loan words from the Semitic root smd "to grind into groats" ( cf. Arabic: سميد samīd). [3] Production [ edit ] Semolina grains in close-up In Pakistan and North India semolina is called sooji, and in South India, rava.
