Since all the recipes that use the oven require you to handle the dough and prepare it for the second rise, they expect some previous practice and a warm place for that rise to occur (my kitchen is generally cool and I use a homemade proofing box for the rising). The recipes deliver high quality gluten-free breads that come as close to wheat in terms of taste, texture and appearance as any you are likely to find; they make tender loaves with the consistency of a homemade white bread and the rich taste of millet and sorghum, two ancient grains that more than make up for the lack of wheat flavor. Unlike most other cookbooks, there is no separate gluten-free section and only three recipes for gluten-free bread. Not just for a cheap loaf of bread, but also for other things too such as making bread maker pizza dough. My minor tweak is that I used 240 grams (2 cups) of King Arthur All-Purpose flour, 113 grams (1 cup) of King Arthur White Whole Wheat Flour, and 1T of vital wheat gluten.
I was a bit disappointed that there were not more recipes that use the bread machine for the entire process. There are chapters on breads for those on special or restricted diets, such as gluten-free, and recipes using spelt and rye flours. Would be a much better book if it had metric or even weight measurements, although it does have a page showing volume-weight (imperial) equivalents. This book combines the book above with a similarly-designed and illustrated book on traditional baking, so the notes above also refer to this book.
The second note is that I like pictures, especially when a particular technique or process is required, and prefer photographs ( P) over illustrations or drawings ( I). The other half of the book is dedicated to flatbread, pizza, various rolls and more, so overall it covers a lot of ground. Once all ingredients have been added in, put the machine on the 'sweet bread' setting (light color) and press the start button. I was a little disappointed with Brilliant breadmaking because there were no colour illustrations of the different breads.
