We have used the 1816 edition, and are confident that most people will be able to cook from this book with ease, perhaps not as readily so as with Good Things in Englandbut nevertheless nearly everyone will be able to adapt Mrs Rundell’s suggestions to present-day use with no difficulty. Even if you have the original, treat yourself (and your friends) to a new copy of this very special anniversary edition. Slice or shred the apples with a peeler or cut them into matchsticks (peel them, if you prefer), putting them straight into the bowl of salted water to prevent discolouration. But the problem with gifting cookbooks is that you either have to go broad, which means celeb chefs, and the risk of giving your mum her third copy of the new Ottolenghi, or you need a deep insight into their personal tastes and their specific desire for a particular cuisine. Deep frying is not my forte but cooking with confidence means that you can place your trust in a good recipe with clear instructions and feel okay with the outcome.

The Dairy Book of Home Cookery takes you through all the essential cooking techniques and now includes over 950 recipes from soups to sauces, dips to desserts, pastry to pickles and curries to cakes.
