The spirit has pure water added to it before it is rested for a minimum of two weeks and then bottled at 46% ABV. Boatyard Double Gin hails from Northern Ireland and the `double` refers to their distillation process and approach to putting juniper at the start and end of the process resulting in a more pronounced juniper flavour. French Sauternes dessert wine has been added to the gin to bring a touch of natural sweetness to the final spirit.
