Foursquare Distillery is owned by the Seale family who have five generations of rum-making expertise dating back to 1820. I get a lot of vanilla, caramel, raisins and coffee on the palate, with a hint of sherry and nice little kick imilar to what you'd get if you were to drink a bourbon, it's a very welcome one though for only being 43%. The 12-year-old rum has notes of tropical fruits, toffee, banana, vanilla and tobacco, with a long warming finish from being secondary aged in sherry casks. Bacardi 10 year old which is not mass produced is worth a try also if you enjoy these simlour styles.With a commitment to preserving authenticity, Doorly's 5 Year Old Barbados Rum is lovingly bottled without any added sweeteners or flavourings, ensuring a pure and unadulterated experience. Aged for a minimum of 3 years in American oak before charcoal filtration to give the final 'white spirit'. Spices galore on this one, kicking us off is some Ginger and Cinnamon before a Madeira Sweetness comes in to play with a Thick Jam like texture alongside before an Oak, Nutmeg and Giger infusion come to finish off. The use of different cask influences, tropical ageing and various ABVs make the rums in this collection a must have in any bar or home-bar. It soon evolved into Doorly Macaw Rum and, although bulk rum was traded in casks long before, it became the first bottled rum to be exported from the island. Yes, it’s quite woody, but the Madeira cask rum really balances that out by giving it plenty of red and dried fruits notes.

L. Seale’s who kept the tradition and made Doorly’s their main export brand – they even kept the signature colourful macaw on the labels.
