The sugar cane is sourced from a third-generation farm and the cachaça is made in a pot still. It's another brand that plays with barrel aging, many resting in native Brazillian woods to impart distinct flavors. Cachaça is produced in copper stills. Levels of copper in homemade cachaças can exceed the legal limits established by Brazilian law. Some copper is considered desirable in the distillation process as a catalyst for the oxidation of sulfur compounds produced by fermentation, but the levels must be controlled by adequate maintenance and cleaning of the still to remove accumulated verdigris. Adsorbents are used, but the most commonly used adsorbents, activated carbon and ion-exchange resin, have been shown to alter the chemical composition of cachaça. Sugarcane bagasse has been proposed as a selective adsorbent. Cachaça is a sweet, vegetal, and usually clear liquid made from fresh sugarcane juice. It’s most similar in taste and style to rum, which is primarily made from molasses, and rhum agricole, which is made with fresh sugarcane juice in Martinique. By law, cachaça must be produced in Brazil and have 38 to 54 percent alcohol by volume. However Cachaça wasn’t officially recognized in the U.S. as a distinct Brazilian spirit until 2013, and it’s still relatively hard to find a wide selection of bottles stateside despite there being more than 5,000 legally registered cachaça products in Brazil, according to Brazil Business.

Pitu is produced from pure sugar cane. It should therefore not be compared with white rum, which is manufactured from sugar cane leftovers such as molasses. Pitu only uses the best, most selected sugar cane, distilled and processed to the highest technical standards. The harvested green sugar cane is shredded into small pieces, the chaff removed and the product then mashed. With: Cachaça, orange curaçao liqueur, sweet vermouth, Angostura Aromatic Bitters, ginger ale and cola. The qualities from the olfactory are consequently carried over to the gustatory sensation. A smooth, round entry leads to a slightly glycerous, moderately full-bodied palate with excellent, refined tropical fruit flavors mixed with white pepper and beautifully balanced sweetness.
