Meanwhile have the white chocolate melting in a clean bowl over the simmering water. Allow this to cool and then drizzle it all over your Guinness Truffles. I like to think the white chocolate looks like the creamy head you get on top of a glass of Guinness. Don’t cover the truffles completely just swish it over them. Preheat the oven to gas mark 4/180°C/160°C Fan/350ºF, and butter and line a 23cm / 9 inch springform tin.

If you’re making your truffles ahead of time, plan to re-roll just prior to serving, as the ganache will gradually absorb the cocoa powder. Allow truffles to come up to room temperature prior to serving. Truffle Variations Now on to the chocolate. You will want to use a bain marie/double boiler to melt your chocolate. You can also use a microwave should you happen to have one. We don’t as ours blew up almost ten years ago and we decided to hold off replacing it till we felt we actually needed one. Guess we never have. You can also just use heat-proof bowls over a pot of simmering water. Make sure the water doesn’t actually touch the bottom of the bowl though. That used to be the advertising slogan for this world famous rich dark beer. Well I don’t know what some of the puritanical health police would say about that nowadays but I like to think it is.These Guinness chocolates are quite soft at room temperature due to the amount of beer in them. So store them in the fridge and bring them out just before you want to serve them. How many Guinness chocolate truffles does this make? Sugar, Cocoa Mass, Vegetable Oils (Palm Oil, Sal Oil, Shea Oil, Cottonseed Oil, Mango Oil, Rapeseed Oil, Sunflower Oil), Glucose Syrup, Guinness Beer (6%) (contains Barley, Gluten), Cocoa Butter, Dried Whole Milk, Neutral Spirit, Dried Skimmed Milk, Dextrose, Flavourings (Malt Beer, Vanilla), Humectant (Sorbitol Syrup), Emulsifier (Soya Lecithin). Take a teaspoon and make small balls out of the truffle mix and press down slightly to make them into little patties on a tray lined with baking parchment. Come on, for a chocolate recipe these Guinness Truffles are at least a tiny step towards the healthy side. That has to be better than falling into the deep dark pit of despair that means no treats forever! Ingredients for Guinness truffles If you don’t have Guinness on hand, feel free to substitute another beer of choice. You can also replace the Guinness with extra whipping cream if you want to make an alcohol-free ganache. The result will be a standard dark chocolate truffle, but it will still taste delicious.

A selection of the original Guinness chocolate truffles. A crisp milk shell with a Guinness truffle centre. A great gift to share with friends. 320g of truffles are included. When the cake's cold, sit it on a flat platter or cake stand and get on with the icing. Lightly whip the cream cheese until smooth, sieve over the icing sugar and cornflour and then beat to combine. The new Guinness Imperial Gingerbread Spiced Stout is brewed with allspice, ginger, cinnamon and nutmeg, and then aged in bourbon barrels. Its rich notes of gingerbread and warm notes of bourbon make it a delicious winter sip. I got 20 truffles from my recipe. How to serve these chocolate truffles How long will these chocolate truffles keep? If using heavy cream, add it and beat until you have a spreadable consistency. If using whipping cream, whisk first to soft peaks, add a couple of spoonfuls into the cream cheese mixture and once this is combined, fold in the rest. This recipe is particularly easy because it does not require tempering. However, if you’re feeling ambitious you can definitely skip the cocoa powder coating and enrobe your truffles in tempered chocolate instead! (See this post for detailed instructions on enrobing truffles in chocolate.) Remove the bowl of melted chocolate from the heat. Pour the Guinness syrup into the chocolate and stir well to combine. Pop this into the fridge to set up for about an hour. Don’t you just love recipes with only a few ingredients. Even better when those are things you often have in your larder/store cupboard. If using double cream, add it and beat until you have a spreadable consistency. If using whipping cream, whisk first to soft peaks, add a couple of spoonfuls into the cream cheese mixture and once this is combined, fold in the rest. This recipe is created in partnership with Guinness. All text and opinions expressed in this post are entirely mine.

It’s that time of year again, when all things point to tradition. In my home that means the tree goes up Nov 1 and comes down February-ish. Four months of holiday is insane by most people’s standard, but 2020 is writing new normals for us all. Insane might be the new genius, so I may be setting a new trend with all my extended holiday merry making. Pour the Guinness into a large wide saucepan, add the butter — in spoons or slices — and heat until the butter's melted, at which time you should whisk in the cocoa and sugar. Beat the sour cream with the eggs and vanilla and then pour into the brown, buttery, beery pan and finally whisk in the flour and bicarb.Sugar, Cocoa Mass, Vegetable oils (Palm, rapeseed and sunflower), Cocoa Butter, Glucose Syrup, dried whole milk( Milk), Dried skimmed milk( Milk), flavourings, dextrose, Guinness beer( Barley,Gluten), Humectant (Sorbitol syrup), Neutral spirit, Emulsifier: Soya Lecithin( Soybean), preservative (sorbic acid), Barley Malt Extract( Cereals containing gluten), over medium heat, bring cream to a boil. Pour cream over chocolate and let sit for 2 minutes, before stirring to combine. Rinse out sauce pan and fill 1/3 of the way up with water, bring to a simmer. Place the chocolate bowl over the pot of simmering water, making sure the bottom of the bowl does not touch the water. Stir the chocolate mixture continuously, until mixture is smooth and homogenous. Remove from heat and stir in the Guinness Imperial Gingerbread Spiced Stout.

To start, open Guinness Imperial Gingerbread Spiced Stout while you prepare this so that it flattens a bit. These truffles are also a fantastic way to use up all of the “odds and ends” of leftover chocolate left over from other recipes, or chocolate that has been previously tempered. Melt the dark and milk chocolate together to get a really rich chocolatey base for your Guinness truffles. Do not add the white chocolate, that comes right at the end, so don’t eat it while you are doing everything else and polishing off the bottle of Guinness too.

Condiments

Truffles are minimal in ingredients, so make sure to start with a high quality chocolate and one that is preferably at least 60% cacao. The quality of the chocolate will heavily impact the flavor. First comes the Guinness. In a small pan heat the Guinness with the sugar till it has completely dissolved.
