Garlic Powder: You can never have too much garlic! Add some in for savory flavor that will complement the spices perfectly. Schwartz work directly with local farmers across over 40 countries to ensure our ingredients are of the highest quality. Carefully selecting the best spots to grow our herbs and spices around the world allows us to guarantee intense flavours, vibrant colours and powerful aromas. Growing up in a Mexican-American household, chorizo was a staple, cooked for breakfast most weekends, served with eggs and a tortilla for the most comforting breakfast burritos ever. My mom never really made her own homemade chorizo, as the markets we lived near did a great job making their own, so we’d just buy in bulk from the supermarket. Chili powder- If you like your food with more heat, you can swap regular chili powder with ancho chili powder. Regular chili powders are made from a combination of peppers. Ancho chili powder focuses on just the one variety of ancho chiles, resulting in aspicier flavor. Salt- You can use kosher salt, if preferred, though do not swap for sea salt unless you can grind the flakes into smaller pieces with a mortar and pestle.

As I mentioned above, the ways you can enjoy this vegan chorizo are limited only by your imagination! Slice it, chop it, tear it into chunks, or pulse it in a food processor. A note about Spanish Chorizo: Spanish Chorizo spices tend to be focused on cured sausage and heavy in paprika. That is not what this recipe is intended for. Ingredient List

Place the seitan chorizo in the steamer basket, cover, and reduce heat to maintain a simmer. Cook for about 40 minutes or until the foil pouches feel firm when pressed. This chorizo spice recipe is the perfect balance of sweet, savory, chili powder, and salt to bring that authentic flavor. And while there are different ways to make chorizo spice blends, this one reminds me most of home. What is in Chorizo Seasoning? Lemony Asparagus Pasta– a simple spring pasta dish, with seasonal asparagus and a sprinkling of golden crispy crumbs. First, don't be overwhelmed by the length of the ingredient list because half is spices! The base for this seitan chorizo is actually really straightforward. But where I live now it’s a different story, and I’ve been craving that childhood favorite. So we tested and tested… and tested some more, until we came up with the closest thing I could get to that flavor I grew up with (and using ingredients I could easily find in Oregon). If you have dried ancho chiles you bought at a farmers market sitting in your cabinet just waiting to be used (I can't be the only one), try rehydrating them in vinegar and puree into a paste. Apple cider vinegar and red wine vinegar are your best bets. Just remember that when using fresh ingredients, your spice blend should be enjoyed the same day. This is my favorite way to add spiced chorizo flavor to recipes. Feel free to play with it too. Add more of what you like and less of what you don't to personalize it to your taste and diet. Chef Ruben Lopez Mesa, from private caterers A Table of 10 in Orange, was born in Pinto, just south of Madrid. "When we were growing up, families would raise and fatten a pig. During la matanza, the annual slaughter, much of the pork was made into sausages," he remembers. "They would mix the pork with herbs they grew themselves, some garlic, salt and, of course, smoked paprika. Some chorizo were eaten fresh, the others hung in the cellar to dry to last through the cold winter."
