No worries, here’s how you can make chapati (or roti whatever you call it) on tawa without putting it directly on flame to puff.

Take 2 cups (270 grams) atta in a large bowl. Usually a round flat plate with shallow edges called paraat is used but I just had a round mixing bowl so that’s what I used. What really makes roti different is that there is no ghee (clarified butter) or oil used on the skillet. It is cooked completely dry.

If some extra dough is leftover, then keep it covered in the fridge. Keep in an air-tight box or container, so that the surface of the dough does not become dry. The whole wheat flour used for making these flatbreads is known as “atta” in India. Even today, many Indians make their own atta by visiting local grindingmills(called chakki in Hindi). The wheat grains are stone ground making for a really fine flour. The phulka can be smeared with ghee or oil for serving. In my home, we definitely enjoy a bit of ghee on our roti. It is one of our favorite things to eat with veggie dishes like aloo gobi, aloo matar, bhindi masala, lauki kofta or with dals like dal fry, dal tadka, or dal makhani. What Kind Of Wheat Flour For Roti Alternatively, You can also cook the naan bread in a tandoor or bake them. Place the naan bread for baking on a greased hot tray or stone and bake in a preheated oven at your oven’s highest temperature.

The dough should be kneaded very well so that the gluten is formed. The dough should be smooth and soft to the touch. If the dough is hard then roti will not puff up.So if you want to enjoy having crisp rotis, then do give khasta roti a try. They do taste good when accompanied with a North Indian gravy or curry like paneer butter masala or palak paneer or chana masala. Also unlike phulkas, the chapati never gets roasted on an open flame, cooking all the way through on a tava. Chapati is usually larger in size than a phulka which is smaller in size. Serve the roti immediately or transfer the roti to a bread basket covered with a towel to keep them warm. Continue with your remaining dough. (You may need to reduce the heat slightly as you continue to cook your roti. If the bubbles in your roti are burning and popping, most likely your pan is too hot.)

Roti is made of whole wheat flour and nothing else really and is eaten in India with dal and curries. Heat the tawa (skillet) on medium-high heat. Make sure the tawa is hot enough before you place the roti on the tawa.
