Ailsa Bay single malts come from Ailsa Bay distillery, based in the same industrial location as Girvan distillery, which is famous for its grain whisky. Located in Lowlands, legendary Girvan was built in 1963 under the direction of William Grant’s great grandson Charles Gordon. Ailsa Bay was established in 2007. Whisky enthusiasts like myself are accustomed to reading about the history of the distillery and about the traditional side of making whisky. All of them were built by blending firms and came into being at a time when an increase in production was deemed necessary. All then closed when a downturn in demand occurred. The Auchentoshan single malt whiskey is among the best Lowland single malt scotches. It’s unique taste comes from the fact that this whiskey is matured in casks of three different types. The production process starts in American Bourbon casks, carries on in Spanish sherry casks, and finally, it is matured in Pedro Sherry Casks, giving a rich and complex flavor of sherry and toffee. It is old-fashioned and very fine in its regard. The extra layer of fruit and sweetness offers its rich taste and fruitiness. Nose Best English – Cotswolds Founder’s Choice: a year and a bit after its first release and Cotswolds has already risen to the top of the increasingly big English whisky heap. The Founder’s Reserve is an interesting whisky, showcasing the distillery’s STR casks – shaved, toasted and recharred wine casks, a type much-loved by the late Jim Swan, distilling consultant extraordinaire and creator of the Cotswolds style – a punchy type of cask that can overpower whisky when not managed correctly. As the award shows, despite the distillery’s relative youth, Cotswolds know how to make good whisky.
