This classic 6-cup Chemex pour-over is a simple and elegant way for brewing filter coffee. For us, brewing should be a ceremony, and with the Chemex it really is. This short brewing guide gives insight on how to get the most from your Chemex brew. Brewing coffee with a Chemex is simple, but there are a few key steps you’ll want to follow for the best results. If you work in an office where you’re in charge of making coffee, then 4 cups at a time probably won’t cut it. You might then consider some of the higher-capacity Chemex coffeemakers such as the 8-cup or 10-cup editions.

If you’re using pre-ground coffee, aim for a grind size that is slightly coarser grind than what you would use for drip coffee. For most people, a coffee brewer that can make about 4 cups of coffee at once should more than suffice. According to Mayo Clinic, anything greater than 400 milliliters of coffee per day is too much. Their advice states that that’s about 4 cups of coffee.Once the desired amount of coffee is brewed, lift the filter with spent grounds out of the brewer and discard. Should You Choose the 8-Cup or 10-Cup Chemex? Whether you want a 3-cup or a 6-cup Chemex depends on how much coffee you drink. The 3-cup version can hold approximately 1 pint or 473 milliliters while the 6-cup version brews 30 ounces or 887 milliliters of coffee. Again, we recommend a ratio of 15:1. So, if you’re brewing with an 8-cup Chemex then you’d want to use 64 grams of coffee (8 grams per cup) to brew eight 5-oz cups of coffee. Think you need an expensive machine or a barista degree to make café-quality coffee at home? Think again. With the Chemex, all you need is a little know-how and the perfect Chemex recipe.

Digital scale and timer– This isn’t required, but it will help you make consistent coffee each time. Are you more into handblown glass, or perhaps you want an all-glass Chemex coffeemaker? Depending on how you answer that question, you don’t necessarily get to choose between a 3-cup or a 6-cup coffee brewer.Remember, it’s all about experimentation!
