Marinating the beef in red wine does two things; the acid in the wine starts to breakdown the proteins in the meat, allowing more of the flavours to penetrate the beef, and it also flavours the wine with more beefy flavours in return, with more time for the herbs and meat to infuse, creating a more complex and flavourful bourguignon. If you don’t have time, it isn’t a compulsory step, as the oven and slow cooking does a lot of the work in terms of melding flavours, but it does add an extra layer of richness and complexity.I decided to call it Beef Bouillon because that’s what I’m using it to replace. Some might call it Umami Seasoning or Umami Powder, but that name isn’t as immediately familiar here in the U.S.

Tomato Powder provides that super-concentrated fresh tomato flavor even when tomatoes are out of season. Tomatoes are also high in natural umami glutamates, so tomato powder amps up the flavor in my beef bouillon. I did add a pat of butter to the noodles once I put them in my bowl, but I’m not even sure that was necessary. The flavor had soaked in so well that it would have been good on its own. I ended up with some great tasting spaghetti. It had the flavor of meatballs without the chunks. Also, I didn’t even have to salt it. While there are many very suitable substitution options, your choice will come down to what you have on hand and if you are interested in a vegan/vegetarian option. I remember my grandmother making bouillon in my childhood. I still associate that smell with being cozy and full on a winter day.
