Protect your investment in your Masterbuilt 40-inch Electric Smoker from the sun, rain, sleet and snow with this durable, water-resistant cover. We crafted our cover with our most rugged and water-resistant material that boasts UV additives to prevent fading and extend the life of your cover. The inside features an added PVC liner that prevents tearing and double stitched seams to prevent leaking. As with many other “smart” cookers, we found the wireless connectivity to be hit and miss. Sometimes it would connect but the connection would later fail. Sometimes it would not connect. Other times it connected fine and remained connected throughout the cook. We’re not alone. Masterbuilt mentioned to me that this is a known issue, and subsequent firmware and app updates should correct these issues. Currently as of this writing, the app does not allow the user to switch between Bluetooth connection and Wi-Fi, which offers much greater range. We were assured that the ability to toggle to WiFi will come with a later update. Thankfully, the Gravity Series doesn’t require these wireless connections to function, so if you don’t have any fancy wireless devices you can still use it successfully. Conveniences

Putting the fiberglass gasket on between the hopper and the ash bin did present a little bit of a challenge. Simply load the hopper with briquettes or lumpwood charcoal, light the fire then set the desired temperature on the digital control panel, or a smart device using the Masterbuilt App. The variable speed DigitalFan™ will then maintain the cooking temperature at the required level as the digitally controlled fan moves air flow from the hopper to the cooking chamber to give full control over the temperature. The Masterbuilt App also doubles as a fantastic resource for recipes plus all sorts of information to master the art of smoking, grilling and more. Thankfully, if the coals don’t take and the cooker fails to rise in temp, it will tell you via a series of beeps and an error message on the display. No such problems with my trusty Fatwood. Flame On! The charcoal reservoir is designed with two baffle plates to shut off the supply of oxygen at any point when you’re done with your cook. By sliding the two plates into the closed position, oxygen will be cut off from the fire, suffocating the fire and beginning the cooling process. These mods have enhanced my Masterbuilt 560 experience. I’m confident they’ll benefit yours as well.Add up to four meat probe thermometers to your Masterbuilt Gravity Series BBQ + Smoker. Each probe will give a reading to the digital or WiFi controls to allow you to cook a variety of foods to their desired temperatures. This happens to be the area closest to the fire, and it also happens to be where the ends of the 1 piece seal are bonded together. The Masterbuilt Gravity 560 is a great blend of convenience and function at a price that’s hard to ignore. There aren’t many grills that we can compare this to without moving into professional models designed for the competition circuit, and we love that there’s a gravity feed grill available for the rest of us. I like to put every grill I test through some standard tests to see how well it performs in a few different areas. Come up to temp speed test Unfortunately, that is not the case, and that is perhaps for the better. In general, we can do everything we want with 3 or 4 barbecues. Maybe two, but don’t tell my wife that. The only thing we missed was a reliable smoker that does it’s work while we are doing something else.

Masterbuilt assures us this is no cause for alarm and that in fact it’s normal and the unit remains fully functional and safe to use. We asked them for an official statement on this issue. At first they declined to offer us a statement on the matter but later shared this with us and with others on some public forums:You could also just as easily wad up some newspaper and push it into the opening to fire things up, but we find that if newspaper is the way you’re planning to go, drizzle a bit of vegetable oil on there first to make sure the coal catches fire before the newspaper goes out. This way, you burn off the leftovers of dirt and grease that may have been left behind during manufacturing. After that, you let the Masterbuilt cool down, and you can get started. After lighting, you are at 140 degrees (284F) in ten to fifteen minutes. If you want to grill, because that is also possible, it takes 10 minutes longer. In no time, the Masterbuilt is roaring at 350 degrees (660F). The control panel includes a power button surrounded by four buttons that toggle the digital display between the cooker set temperature, meat probe temperature, countdown/count-up timer function, and Bluetooth/WiFi pairing. You adjust the temperature anywhere from 150° to 700°F by pushing in the left thermometer symbol button then twisting a separate knob. Press the same button again to set the cook temp, or it will set itself after 3 seconds. The display defaults to reading the current cook chamber temperature. It will also read “OPEN” if the cooking chamber lid is opened, which disconnects remote access as a safety feature. The app will remain connected for monitoring the temperatures, but you’ll lose control from the app. That means if you’re using the app, and lookin’ while cookin’, be sure to pair your device with the cooker again to regain remote access. Those dang switches! Grrrrrrrr!

The real star of the show is the gravity-fed hopper attached to the right of the grill. Accessible via a lid, the hopper is where you store all your fuel, be it lump charcoal, briquettes or wood for smoking. Refilling is also very easy. Remove the latch from the hoppers lid, and the fan will immediately stop blowing. You refill the charcoal or briquettes and close the lid again. The fan then starts working without the temperature in the kettle having dropped.The whole setup reminds me of an offset smoker, though one assisted by a fanned temperature-control system. It's similar to how pellet grills run too, save that they mechanically feed pellets from their hoppers into a separate fire box inside their cooking chambers. Cooking with the Gravity Series
