About this deal

We recommend trying your raspberry gin with a classic tonic water like Llanllyr Source Tonic Water and then experimenting with elderflower-flavoured tonic water to really take those summer flavours to the next level. Bake Your Pastry: Cover your pastry with greaseproof paper and baking balls, then blind bake for 20 minutes until light gold. Remove the paper and weights and bake for 5 minutes until golden. Leave it to cool for 15 minutes, then remove from tin and leave to cool completely. Pour over the gin and close the jar. Leave it in a cool dark place, to sit and infuse for at least 4 days before sampling. The longer it's left the stronger the flavour will become. Sugar - just granulated white sugar. The first thing that happens is rhubarb gets macerated in the sugar. This draws out moisture and enhances its flavour. It is the Christmas season after all, so why not celebrate the end of 2019 with a festive drink? Trust me, this is one of those rhubarb and raspberry recipes you’ll definitely want to try!

I love my drinks on the sweet side, and use 400g (14 oz) of sugar in most infusions. If you aren’t keen on sweet, start with 300g (about 10.5 oz). Then taste as you go along, you can add more sugar right up to the end. Just stir to dissolve, and strain when the time comes. Fresh or frozen raspberries are fine.Just make sure that your fresh raspberries are indeed fresh. Shop bought raspberries and strawberries don’t seem to have a long life at all. So there’s something to be said about using frozen, I always have a couple of bags in the freezer, for all sorts of reasons. Although Rhubarb Gin is delicious on its own as a liqueur, I rather like it with tonic, especially a less-sweet one like Fever Tree or Fentimans. What equipment do you need? Rhubarb And Raspberry GinWhile this lemon gin doesn’t taste at all like what you’d expect from a typical gin, it’s incredibly moreish and one of our all time favourite flavoured varieties. If you love the sweet-yet-tart citrus taste of still lemonade, then we guarantee you’ll love this gin. On its own, it’s slightly sweet, but not overpoweringly so; when paired with a tonic or lemonade, it becomes a wonderfully tangy long drink.

Leave the rhubarb to sit in the sugar at room temperature overnight. It will become really fragrant and juicy. Steep in ginI use a two-litre Kilner jar to make my fruit gins. This gives you plenty of room for one litre of gin, the fruit and the sugar. The yield is just over a litre - maybe 1.1-1.2 litres. If you use half quantities, you could use a one-litre jar - or an empty gin bottle. Fresh fruit or frozen? This is by no means a crowd-pleaser. Rather, it’s an acquired taste for spice lovers: if you’re keen to try an unusual flavoured gin that’s not overly sweet, then get out of your comfort zone and give this a go.
