If you use a ring pan to bake them, each individually will still look like a coconut roll although the whole will look like a round wreath, similar to a roscón/ rosca de reyes (Three King’s cake) although the toppings are different. Then prepare the filling: Mix the coconut, condensed milk, vanilla, and nutmeg together in a medium bowl. Reserve! Transfer the yeast mixture to a large mixing bowl, then add the remaining dough ingredients. Using a dough hook, mix until the dough until it comes away from the sides of the mixing bowl. This should take around 10 - 15 minutes. The dough should feel smooth and stretchy. Freshly grated coconut - this is coconut in fine grated form. If frozen, let it thaw first before using.
