As we wanted to examine the wear formation and to compare the wear patterns, and not the process of the stones’ abrasion [ 78, 93], the experimental programs were conducted manually. Therefore, we used einkorn, almonds and raw red meat as objects for experimental analyses. We choose a group of six persons aged between 20 and 40, including women and men, to conduct experiments lasting more than ten hours at various times of the day and different temperatures over a period of one year with the task to produce fine and coarse flour. We documented traces on the surfaces of the tools macro- and microscopically at regular intervals. Documentation included descriptions of movements, correlation between amounts of processed foodstuffs and necessary times for grinding, and correlation between weights of grain and obtained product. Modifications of the surface were registered after macroscopical and microscopical examinations. We examined two spots on the grinding stones used in the experiments, one in the center and one at the margin of the working surface, at magnifications of x10, x20, x40, x80 and x160. We observed that results can be significantly influenced by the spots chosen for microscopical analysis within the areas with traces. A key advantage of the mortar is that it presents a deeper bowl for confining the material to be ground without the waste and spillage that occurs with flat grinding stones. Another advantage is that the mortar can be made large enough for a person to stand upright and adjacent to it and use the combined strength of their upper body and the force of gravity for better stamping. Large mortars allow for several people with several pestles to stamp the material faster and more efficiently.
