Sheep Dip was first bottled by a gentleman farmer and publican as his in-house whisky around 1974. The pub was in Oldbury on Severn, and as its popularity grew with the locals, so the small concern of MJ Dowdeswell & Co Ltd grew. It eventually managed to supply the likes of Fortnum & Mason and enter the US, Canada and New Zealand markets. We are involved in what is known as a Knowledge Transfer Partnership with Edinburgh’s Heriot Watt University, which offers brewing and distilling degree courses, and all our distillers are graduates of the university. With Heriot Watt we’ve developed a strong understanding of botanicals, and are developing a botanical dictionary, if you like, of which botanicals give exactly what effects. It’s a science. We did a lot of work on wood finishes when I was with Glenmorangie, and that was all much less specific than the use of botanicals. Nose: Astringent note of lemon furniture polish assaults the nose first, with a musty overtone. Balance: Good idea but something falls short in execution. Sheep Dip is too flat without personality. With Water: A few drops of water make the licorice/anise note more piercing, now smelling more like cardamom. Other than that, no change except for a slightly sweeter root beer note on the finish. I don’t see a reason to bother with water for this dram. We may, but are not under any obligation, to release new functionalities and tools or other features for the Service every now and then. Any new functionalities, tools and features shall be part of and governed by the Terms from the moment they are launched and/or available.
