My second book, Fresh India, was published in July 2016 and is a celebration of India’s love of vegetables.

Finally, add the chard leaves, coat with the mixture and pop the lid back on for a final 2 to 3 minutes, until the leaves have wilted. What I thought: I made Meera’s aubergine and pea curry to accompany a night in watching the football. If you like, finish off the dish with a quick curry-leaf tarka: put 2 tablespoons of oil into a small frying pan over a medium to high heat.
