Place springform pan in the centre and fold aluminum up to the sides to cover the outside of the pan. A creamy Mint Oreo Cheesecake served on a crisp Oreo cookie crust and made with no waterbath required! Use a handheld electric mixer on medium-high speed and beat the cream cheese for one minute until smooth. Eggs - it’s best if your eggs have been at room temperature for at least 30 minutes, although not totally critical for this recipe.

In a chilled bowl of a stand mixer, whip the heavy cream at medium-high speed until stiff peaks form (be careful not to overmix). In the bowl of an electric mixer fitted with the paddle attachment, or in a large bowl using a handheld mixer, beat the cream cheese and reserved mint Oreo filling together on low speed until creamy, about 2-3 minutes.Pour Oreo crumbs into a medium bowl and mix in melted butter using a fork until all the crumbs are coated. For the mint whipped cream, simply beat heavy cream, powdered sugar and mint extract together until the cream fluffs up.

Once all the truffles are coated, add the green candy melts to a small heat-safe bowl and microwave in 30-second intervals, stirring after each interval until smooth. Substitution for Cake Flour: Using all purpose flour (plain in UK) to make Cake Flour: For each cup of flour in a recipe, remove 2 Tablespoons of flour and replace with 2 Tablespoons cornstarch (cornflour in the UK). Oreos: I used original Oreo cookies, but double-stuffed or mint chocolate would also be delicious here.If you use gel coloring, just start with a small amount and add until you get the color that you want.
