Since it is such an important ingredient in many of my recipes and to save any confusion, here is the coconut that I use when I am catering in the USA and Canada. And this is the one I tend to buy when I am in the UK. This (or similar versions) are easily available in good health food shops or supermarkets. You can also buy it online via this link here: Any widely available mild curry is ok. If you are not cooking for children and like spicy meals, use hot curry instead and cook the sauce with a small chilli to add more heat to it.The same advice applies for tomatoes. You need to cut them pretty small. I already said that we prefer using tinned plum tomatoes. You don't have to chop them on the chopping board as that would be a pretty messy job. Coconut oil is the perfect butter substitute, especially when you’re talking frosting. It adds the same creaminess and texture as buttercream, creating a moan-worthy coconut frosting everyone will rave about. What you need This is possibly the most heavenly fudge in the world. It’s a world apart from the regular varieties which are usually laden with dairy and not-so-healthy sugar. Extra coconut frosting tips: To prepare: Due to the high fat content of the milk it can become quite grainy, so before use process in a blender or beat well for a few seconds. Creamed coconut is ideal to use when you need a coconut flavour but you don’t want additional liquid, as coconut cream or milk would add to your recipe. You can roughly chop it or grate it into whatever you are cooking, for example a curry or custard.
