Just as I have finished the buttercream I carefully press in some rainbow sprinkles to the bottom of the cake for a bit of colour and I just love the design – be warned, sprinkles will fall off at this point so beware! After this, I chill the cake again!

It’s never been easier to make boxed cake in an air fryer! It’s a one-bowl recipe that requires few ingredients and creates almost no mess. When stored in a container or covered, this air fryer cake keeps well at room temperature for up to a week. Soft batter – if the skewer comes out with soft batter attached, the cake is not done and needs to be baked for at least 10 minutes longer. How Can You Store Air Fryer Cake Mix? Pour and mix the eggs in a large mixing bowl. Then add the water and oil, whisking everything together. Finally, stir in the 2 cups of boxed cake mix with a large spoon until the batter is well combined.I’ve always been told whether its from the notes in my Granny’s baking bible, or just by word of mouth, that 12 weeks before Christmas is the best time to create a Christmas cake. For the buttercream, you do use 750g unsalted butter and 1500g icing sugar, which technically is a little obscene but the amount of servings from this cake is huge so please don’t be a negative Nelly about the sugar content!

I love all things cake, we all know this, but a rainbow cake is something else. The absolutely insanely bright colours, the sweet taste, and all things cute take it to a different level entirely! It is just glorious. So lets the honest now, I’m mentioning Christmas in… September. I know, it’s extremely overkill, but once you realise this is about a Christmas Cake hopefully you will understand why!
