Increase mixer speed to medium and add in the wet ingredients in 3 parts, mixing until incorporated and scraping down the bowls after each addition. DO NOT over beat otherwise, you will end up with dense cakes. Working with one number at a time, place one layer of the number onto a cake platter. Using a pastry bag fitted with a large round tip (or your favorite tip), pipe the whipped cream frosting over the cake in dollops. You can choose to evenly spread the frosting too. Needless to say, trends don’t push me to try things. My now 17-year old niece loves every trend out there and uses her birthday to challenge me to do some. I am glad she pushes me sometimes as her ideas are some of the most popular cakes on my blog.

Cut a circle in the center of the cake (we recommend using a glass or a really big cookie cutter). Remove the middle, and then slice the lower left quarter. Slice the cake along the dotted lines. Place the left piece horizontally underneath the middle piece. Then take the top right piece and place it horizontally above the middle piece (cut side facing left), and then place the bottom right piece on top of that, facing the same direction.

Cake bake trays and tins

handwash recommended - they can be washed in a dishwasher but, being aluminium, will discolour - this is natural and will not affect the tin's performance but it's why the manufacturers recommend hand wash only I find the best way to get cake mix into awkwardly shaped tins is by using an ice cream scoop. You have more control over it and you’re less likely to get it all over your greaseproof paper and sides. Coincidentally, the number one looks like a giraffe, so we frosted it with yellow buttercream, added a few fondant details, and voila, a little giraffe, perfect for a first birthday smash cake! Number 2 Cake So, if you’re looking for 6-inch cake tins, 8-inch cake tins, rectangle cake tins or some standard cake baking tins, we’ve got everything you could possibly want to perfect your bakes. What to look for in a cake tin

Once cool, slice each number cake into two halves for layering. I used a cake wire cutter to slice mycake but you can also use a serrated knife. Using your rolling pin, gently lift up the icing and place gently over your cake. Start to smooth it with your hands in a ‘scooping up’ movement so as not to tear the edges. Then, carefully cut away the excess icing. It is essentially one pan with pieces that shape out all the numbers and alphabets. Can you imagine that? One pan to make all the number cakes your heart desires and the alphabets. I foresee a lot of birthday number cakes in my son’s future. (Update: See my how to make a letter cake tutorial for my son’s birthday cake!)Place the second layer of the number cake on top of the frosting. Pipe some more frosting on top in dollops. part of a new range of smaller 3D shaped cake tins from the Sweetly Does It sub-range from KitchenCraft
