If ease of use is your primary consideration, one of these hand held sharpeners is the perfect sharpening tool for you. There are three different models, the MinoSharp, the MinoSharp Plus and the MinoSharp 3. All models can only be used for knives that are equally sharpened on both sides. They cannot be used for serrated knives or knives sharpened on one side like the Bunmei knives. All of the MinoSharps use ceramic wheels for sharpening. Minosharp is a brand of Japanese sharpeners owned by the Yoshikin factory who also manufacture Global Knives. Minosharp uses the finest quality of Japanese grit to produce top quality whetstones and pull through sharpeners which are designed to sharpen any brand of knife. Water Makes A Big Difference!– Water is what distinguishes this sharpener from all the other pull through’s. And if you think otherwise, you’d be very mistaken. Allow me to explain. Coating the ceramic abrasive with water serves to accomplish two things: Due to the fact that the sharpening groove and the ceramic wheel are not parallel, the oblique angle of the ceramic wheel is able to restore the razor sharpness of the knife.

I'm not sure of the edge angle but I'm guessing from looking around 20*. I'm keen to take them down to 15* though, do you know if the minosharp has a stone capable of a regrind? The Minosharp Plus 3 has 3 sets of sharpeners - fine, medium and coarse. The ceramic wheels are larger and longer lasting, than the wheels on the original minosharp.These guide rails are designed to help maintain the correct angle for sharpening knives when sharpening with a whetstone. The angle is between 10 and 15 degrees. The sharpener really lived up to its expectation, and i'm really loving it! I even used a piece of paper to test the sharpness of it like the demo I saw on youtube.

I tried out the Minosharp as soon as it was delivered, and I followed the instructions to use the hard grind for 20 times, then the medium, followed by the fine grind. Because my knife is quite damaged, I had to repeat the process two more times until the chip disappeared. I’ll bet the answer is no. They use different stones with different grits to achieve the desired result. The point I am trying to make here is that a single abrasive/grit is not always sufficient. Having a system that offers more than one stage is great, because it makes it that much more flexible, versatile, and complete.Like the MinoSharp, the MinoSharp Plus has two sharpening wheels, one rough and one medium. The are the exact same grits as the wheels in the MinoSharp only larger. Not only do the larger wheels create a longer lasting edge, they are also more powerful than the smaller wheels. This sharpener can return a sharp edge to a dull knife.
