We’ve found that there can be huge variances between thermometers. From a candy thermometer to a run of the mill all-purpose metal probe thermometer to an infrared laser thermometer, there is definitely big variation. When heating oil to 350° F/177° C, the probe thermometer read 350° F, whereas the infrared laser thermometer read 380° F/193° C. MSG. Strongly encouraged. MSG adds extra umami to the finished crisp and makes it so delicious. However, you can skip it if you have any concerns over MSG. Use sea salt instead. Find Sichuan red chili flakes at Chinese grocery stores. You can also find them online from Asian grocery merchants like sayweee.comand The Mala Market. The Mala Market in particular sources their Sichuan Chili Flakesdirectly from small producers in China. The first time I made this, I made only a half-batch to try it out. How silly of me! I make my own popcorn, and I was struggling to find a way to get a spicy flavour right *into* it, till I thought of using chilli oil to pop the corn.To make the chilli oil: Place all the ingredients for the chilli oil, except for the chilli flakes, salt, sugar and MSG. Stir well and put the pan over a medium-low heat. Allow to simmer and bubble very gently for around 30 minutes. The oil temperature should be consistently around 120°C/250°F. The shallots, garlic and Thai basil will turn brittle and crispy. If you notice they start burning, reduce the heat. Once the oil has simmered, allow it to cool for 5 minutes. Meanwhile, place the chilli flakes, chilli powder, salt, sugar and MSG in a large bowl. Stir well. Very carefully pour the hot oil over them and stir well. Allow to cool. Pour the oil into a sterilised jar and close tightly. It's ready to use now but tastes even better after a few days. Storage instructions for this chilli oil are in the recipe notes below.

Once the oil is up to temperature, very carefully pour around a quarter of it into the chilli mixture – it will instantly bubble up and produce a lot of steam. I have made many of your recipes over the years, but this one…oh my gosh! It is fabulous! I made it almost exactly according to the recipe, minus the msg b/c I couldn’t find it. I replaced it with mushroom powder to give it that special umami flavor. I also used avocado oil instead b/c that’s what I already had. It turned out perfectly! Truly addictive and I can predict putting it on everything. Leave the chilli, onion and garlic bits in the sieve to cool down completely and you’ll find that they go crispy. It is spicy, salty and savory with an addictive umami, great for adding flavor and texture to anything from sandwiches to desserts. Cut the aubergine into bite-sized batons, dunk in a simple tempura batter and deep fry squishy on the inside and crunchy on the outside. Use ice-cold water or better yet, ice-cold sparkling water for the lightest results.
