As part of the conservation effort, Pink Pigeon Rum is a contributor to the Mauritian Wildlife Foundation. In 1852, Dr Pierre Charles François Harel developed the concept of local distillation of rum in Mauritius, using only the finest local ingredients from his vast Pamplemousses Garden Estate to create a liquor of outstanding quality and pure refinement. Dry shake, shake with cubed ice, double strain into a chilled flute glass (coated with a crusted spray of vanilla and salt solution). The pigeon was spotted by Greater Manchester Police in Bury town centre as they undertook Operation Heartbeat.

Pink pigeons are still dependent upon intensive management for their survival. Management measures still undertaken include supplementary feeding, the provision of nest boxes and the management of introduced predators such as rats.

Situated one thousand miles off the southeastern coast of Africa, the remote island of Mauritius was settled by the Dutch in 1507. Much like other European countries at the time, the Dutch used the settlement's tropical climate and indigenous population to cultivate the crops they were unable to harvest on the European continent, including sugar cane and ebony. By the time the Dutch abandoned the colony in 1710, the island of Mauritius had developed extensive sugarcane plantations and relied on the crop as its main export. The distillery located on the estate itself was named after its former owner Mr. Pierre de Saint Aubin. It is known for creating the first sugarcane-based rum on the island.The next botanical is the delicate petals of Reunion orchids. These petals release floral honey notes with hints of white flower and gentian.

Next, you will visit the gardens and the orchards surrounding the Château in an environment where the beauty of nature reigns flawlessly on the estate. The grand driveway lined with centenarian trees, the lush gardens, but also the endemic plants, fruit trees, and the giant tortoises’ park will tempt you on a timeless journey. Due to a very successful species recovery programme the population had risen to nearly 500 individuals in 2014. Pink Pigeon rum is produced in Mauritius at the Médine estate, which includes a rum distillery and a sugar factory, both separated by a few metres. The pink pigeon is the only remaining native Mascarenes pigeon species that has escaped extinction. The most famous of these extinct pigeons is of course the dodo. Taste: Shows a delicate balance in minerality and sweetness that give the sugars and spice a structure to hang from and not be overly syrupy Having said this there are a number of constellation which can bee seen all year round in Mauritius as they never drop below the horizon. These are called circumpolar constellations. The Pink Pigeon is one of the rarest birds in the world and flies free in the skies of Mauritius, the tropical paradise of the Indian Ocean.

Made from some of the finest sugar cane in the world, Pink Pigeon undergoes quadruple distillation with each time a new botanical being added to the mix. The bourbon Vanilla is considered to be the finest vanilla in the world. It grows wild in the rainforests of Reunion and Madagascar before being sundried and matured in the wooden cases for eight months and once fully matured it is infused with Pink Pigeons rum and rested for a further six months. This labour intensive process make the bourbon vanilla one of the most expensive spices in the world.
