With one heating element on top, and a fan to move that heat around, you get even, complete heat that surrounds your food from all angles.

Because bread is lightweight, I don't recommend that you use parchment paper or paper liners when making this recipe. There is a possibility that the paper could fly up and touch the heating element, which is a fire hazard.
