I found it to be just a touch too sweet (they really could tone down the organic sugar added), but it tempers well with add-ins or bread for dipping. Fire Roasted Southwestern Vegetable Everyone uses onions as a base, and Lindsey Bareham adds garlic and leeks as well, which, while they certainly won’t spoil the soup, do give it more of a continental character in the case of the garlic, and a slightly slimy element in the case of the leek. If you want to use a leek, I’d suggest adding it slightly later in the process, so it cooks through but doesn’t break down completely. Replacing BOTH the coconut milk AND diced tomatoes with 2 cups of broth will result in a soup soup with a lighter consistency but more pronounced spices, because it wont have the coconut milk or tomatoes to temper them

You can doctor it up with bacon or with ham if you like, but we adore the below vegetarian version just as it is. The Ingredients All of the following are made without dairy, eggs, gluten, nuts (they disclaim coconut, as noted below), peanuts, soy, sesame, and corn. Heat oil in the pressure cooker (lid off) or a large soup pot. Add in the diced carrots, celery and onion.
